Apple Watch Calorie Counter

If I start to use my watch right when I begin

exercising (like walking on the treadmill or doing an walk at home routine) and I am doing a full work out with minimal to no rest, such as treadmill or a at home cardio workout, can I count the total calories instead of the active calories since I’m not at rest?

Yes but you can't see them both together as a single figure as in resting energy + active energy.
