I would like to ask you about Keynote or Pages that I have change appearance is dark mode in System preferences and then I open with pages or keynote On Top of menu bar is dark which I would like adjust is this photo but I have no idea, what should I do ? Could you please help advise me ?

You cannot change the background color of these applications' toolbar. It will be either dark or light depending on those System Preferences > General appearance modes.
