My iPhone was stolen and I have AppleCare so how do we do this?

If you have AppleCare+ with theft and loss coverage then:
File a claim if you have AppleCare+ with Theft and Loss coverage

AppleCare+ with Theft and Loss provides priority access to technical support and hardware coverage for your iPhone. You're also covered for up to two incidents of accidental damage from handling, theft, or loss, each subject to a deductible or service fee.
If all you have is regular Applecare Plus then that won't make any difference to what you do.
