I use GMail at work and when I have an email that I want to retrieve quickly, I can click on a star icon for that email and GMail brings it up for me. Does Apple Mail have a feature like this? Is there a way to retrieve certain emails quickly?

The Apple Mail app does have the option to "flag" a message. It would be somewhat similar to Gmail's "starred" messages. Have you tried this to see if this would suffice?
You can then, create a Smart Mailbox, to "collect" these flagged messages, for quick review.

That did the trick. You don't even need to create a smart mailbox, the moment you flag an email, Mail creates a Flagged box for you. Thanks for your suggestion!
