Apple Watch unpaired but still connected to my Apple Account

I sold my Apple Watch and the new owner is trying to set it up, but it is still connected to my account. I have unpaired it from my iPhone and removed it from my Apple Account, I cannot see a watch in the list of the devices, but this problem persists even when going through the settings and erasing the phone data again. Please can someone assist?
