SIM card changed to different iPhone and old apps still on phone

How do I get new apps from new SIM card onto this phone I moved sim to?

Have you set up your Apple ID on your new iPhone? If you made a backup in iCloud or iTunes (Finder these days) that should start putting back your old apps.

iPhones don’t store anything on a SIM card.

Apps have nothing to do with your SIM card.
