As provided, downgrading your Operating System is not supported. But if the Liquid Glass does not suite your taste, you have the option to tone the effect down by going to Settings >. Display and Brightness > Liquid Glass > Set it to Tinted. Note you must have Reduce Transparency and Increase Contrast turned off.

You can’t reverse updates. Once you get used to the update, it isn’t so bad.
