prior to the latest update, I was able to copy text, paste it into an iMessage, re-copy that text, and paste it as unformatted. Now, however, it no longer works. I must reformat the text whenever I paste. Is there a way to paste unformatted text anymore?

Not sure if this will help you, but if you are referring specifically to text with hyperlinks, there is an option to remove the hyperlink (in Notes at least): tap and hold for options, then the last option in the dropdown list is to “Remove Hyperlink” with a little trash can icon. If the display text is different or not a link, you can also choose “Edit Link”, select the link text then copy and paste it as plain text from there.

Similarly, in Notes if you want to paste text that has effects/font formatting (non-hyperlink), paste the formatted text into a note, then select it and choose “Share”>”Copy” and paste into the Note and it should be plain text.
