Almost every week I will notice my Apple Watch is a day behind.
It is paired to my iPhone and set to mirror iPhone.
both the watch and phone have the latest update.

The backup for the Apple Watch is part of the iPhone backup. So, as long as you still have the latest iPhone backup, you will be able to restore the watch from that backup, if you unpair and set it up again.

Did you already try to force restart your iPhone and Apple Watch?

fixing it isn’t the issue. The fact that I have to do it weekly is the issue. I can’t just look at my watch for the date, I have to check it against my phone or calendar then fix it if it’s wrong. I shouldn’t have to fix something as simple as the date on a weekly basis.
It is still happening. Almost every Monday morning when I get to work, I look at my watch and it still shows Sunday. Every Monday I check for updates. Sometimes it shows an update and I will do an update and that fixes it. Oddly, I have automatic updates turned on, so it should’ve updated overnight. However, like yesterday it showed my phone was up-to-date. I simply did a power cycle and that fixed it. Problem is why is this happening in the first place something so simple as a date
Unpairing the watch will create a backup, which you can use, just in case.
Your Health and Fitness data will sync back to your watch, if you set it up as a new device, since the data is stored in iCloud, but you may lose some watch faces you have created.

Did you already restore the watch to factory settings by unpairing it, and set it up as a new device, without using the latest backup?
No, it was happening before the latest update. I have no reset to factory settings. Don’t want to lose my data.

Have you restored the watch yet?
If I unpair and set up as a new device without using the latest backup then i lose all my data.
I have unpaired and re-set up my watch. I will check it closely over the next few weeks to see if that has fixed the issue.
