How do I fix Siri and voice to text issue on my iPhone 15 Pro?

My microphone is working fine but I can't use Siri or Voice to Text.

I can say Hey Siri and it picks up but when I ask it to do something it gives me a 'something went wrong' on both wifi and mobile data. Likewise when I try to use voice to text it doesn't pick up a word I say but phone calls, voice memos and etc all work fine.

My phones fully updated & no settings have been changed to cause this so I'm not sure whats wrong but it's became very inconvenient especially when I'm trying to ask Siri to do something on carplay.
