Will app data from unbacked-up apps transfer during iPhone migration?

If I go into iCloud settings on my iPhone and choose certain apps not to back up into iCloud to save storage space, will that cause an issue if I was to get a new iPhone and did the migration process to transfer my old iPhone to the new one? Will all current info on the apps that I choose NOT to back up into iCloud transfer ok? Here is a pic of where Iam in setting and you can see how I’ve unclicked a few. Thank you.

Depends on how you make the transfer.

If you use Quick Transfer, and choose "Transfer from iPhone" it takes data that is locally on the device and transfers it to the new device directly, so yes, App data not backed up should still get transferred.

If you choose to use iCloud or an iCloud backup to set-up the new iPhone, then, no, data from the apps that are not being actively backed up would not be transferred.
