I also tried deleting and re-adding the emoji keyboard. And even tried resetting keyboards to default using the factory reset option in settings."

Predicting Text Not Working After an Update:

You've troubleshot this quite a bit --to no success.

Troubleshooting Predictive Text:

A. Reenable Predictive Text:

Disable Predictable Text, and then enable it. Perhaps that will refresh the app and stop this?

2. Scroll to: Turn off predictive text
3. Proceed from there as necessary

B. Report this to Apple:

So, do your Part: Provide Apple with feedback on this, letting them know about this issue.  Apple may not get back to you directly, but the more feedback they receive on this, the more they will know what is occurring, and what bug fixes to include in updates to come. Apple will know nothing of you occurrences, if you don't report it to them.

Force Restart your iPhone, which is something I do after EVERY iOS update --> Force restart iPhone - Apple Support

This is a recent bug in Whatsapp, is that what you are using?
