The deleted apps using a lot of your background activity. Have you done a forced restart yet. That’s most likely the activity running in the background that is stuck in a loop.

Slow in what way? What’s apps do you notice the slowness in? What is your is your iPhones battery health?
Please provide a screenshot of your daily battery capacity usage by app for last 10 days. This will show if you’ve got an app running in the background consuming excessive CPU and GPU usage.
My phone apps are opening very slowly, and the animations for opening and closing apps look different than usual. I can also feel a noticeable delay in the phone's response time.
