You petition the USGS to rescind/ignore the recent Executive Order that steamrolled over centuries of tradition.
Apple Maps relies on the USGS (as well as other global entities) to provide map data, including regional names.

Move to a country where that is the official name and change the region on your phone to match.
By the way, the "original name" is not "Gulf of Mexico." That body of water was called various different names by the indigenous people in the area, including Chalchiuhtlicueyecatl, ilhuicaatl, and nahá. Europeans called it by a variety of different names as well, including Mar del Norte, Golfo de Florida, Golfo de Cortes, Golfo de Iucatan and several others. It wasn't called the Gulf of Mexico until 1550.
