How do I change Apple Maps to display the correct name for the Gulf of Mexico?
How does one switch one’s Apple Maps back to the internationally recognized correct name for the Gulf of Mexico?

You can't. Apple complies with the law where it operates, and when the President issued this name change to the Gulf of America, it was updated across the USGS (United States Geological Survey). That is the primary civilian mapping agency of the U.S. run by the Government, and Apple Maps gets their data from there.
While the international name may be recognized as the Gulf of Mexico, in the U.S. it is now recognized as the Gulf of America.
