I’m trying to do dual outputs of 5760x1080 from my M2 Studio Ultras and can only get one to work at a time.
This resolution is less than a 4k bandwidth and I should easily be able to do more than 2- 4k monitors at a time. Anyone have any insight into what might be the issue?

What displays and what are the spec's of the cables that are you using...?
Cables play a major roll in achieving high resolutions for single and multiple high end displays.

2) Also review the Mac mini M2 Pro, at > Connect a display to Mac mini - Apple Support
If you are using a long cheap HDMI cable and/or long cheap USB-C to DisplayPort cables with adapters...?
Then I recommend getting and using 2 short 8K USB-C to DisplayPort 1.4 high speed cables.

Or optionally 1 USB-C to DisplayPort cable and 1 short high speed certified 8K 2.1 HDMI cable.

The Mac Studio Ultra supports 3 8K displays and total of 8 displays.

The Mac mini M2 only support 1 8K display and a total of 3 displays, plus one of those must be on the HDMI port.
I am actually trying to go into a High Res Video Switcher( Barco E2)
I am using Benfei brand USB C to DisplayPort, going directly into the E2. I can get both cables to work individually, but cannot get both to work simultaneously. I am not utilizing the HDMI output as I’d like to keep the workflow in the same color space protocol.
Ideally I want the dual 5760x1080 and a standard 1920x1080 output for a workstation monitor. This should be attainable.
On another unit with the same specs(M2 Studio Ultras) I am outputing 6 total spaces. 2@4608x1728, 2@2880x1728, 1@1920x1080, 1@1344x1728 - this system is running just fine and is easily pushing more total pixels than this other setup at 2@5760x1080
Duh' I apologize for thinking that one units was a Mac mini M2 Pro chip.
Are the macOS versions the same and up to date on both Mac Studios..?
Are you using the same 8K USB-C to DisplayPort cable on both Mac Studio's..?
Is the 8K USB-C to DisplayPort cable plugged into the same rear port on both Mac Studio's..?

that resolution looks to my eye like a slightly wide 5K display with the bottom missing. The total number of pixels is not the ONLY constraint. You may have to meet additional constraints of row timing.
If it were a 5K display, USB cable requirement would be especially strict, and cables ONE meter or less would be required. But I don't think you can get a high enough data rate over one cable using USB-C -- you might be limited to HBR2, which can only do 30 Hz at 5K.
The other setup you described -- with more cables, each at lower rates seemed MUCH more likely to succeed.
