My wife and I share an account, of which I am the organizer. After the latest update, it has my wife as the organizer and it also switched our names. Now, I updated my contact information, but now my name is now her contact name and she is still the organizer. How do I switch the organizer name?

If you share an account, there is no organizer. You should not share an account at all. Each person should have their own Apple Account.
Organizers are for Family Sharing where each person has their own Apple Account.
If you are sharing an Apple Account, then everything is mixed together in a single account. There are no defined roles like "organizer".
If you mean her contact name is now being used as the account's name, then you need to verify which contact is set as " My Info" in Settings ➜ Apps ➜ Contacts.
Also, what Apple ID is logged in at the top of the Settings App.
