Family Sharing Organizer Name is wrong
How do I change the family Sharing Organizer’s name? It shows a name and (Me), but that is not my name. It’s pointing to someone in my contacts that is not Family.

You could try to remove them from the Family Sharing group with these steps: Leave Family Sharing
However, you'd have to be the Organizer to complete these steps.
Remove someone from your family group
The family organizer can remove anyone age 13 or older* from the family group. If you need to, you can transfer a child to another family.
On your iPhone, iPad, or iPod touch
1. Go to Settings.
2. Tap Family. If you don't see Family, tap your name, then tap Family Sharing.
3. Tap the name of the family member that you want to remove.
4. Tap Remove [your family member's name] from Family.

If you're unable to do this, then it would be best to contact Apple Support directly: Contact Apple Support
They'll need to take it from here.
