I want to download and convert songs to MP3 in order to load them to a non-Apple underwater MP3 player, without violating copyrights. How can I do that? I am happy to buy the songs.

Buy a song from the iTunes Store the normal way, and convert by this procedure:
If you have an Apple Music subscription, make sure you are using the purchased copy, not a subscription copy. The latter will not convert due to DRM.
You can also save several steps by buying songs directly in MP3 format from Amazon.com.
I think that all songs downloadable from Apple Music are now DRM protected. I think that songs previously purchased from iTunes or ripped from a CD are not.
But I may be wrong.

The Mac Music app has a converter that creates an mp3 copy of tracks you have in Music. It's under File/Convert
Yes, but it won't convert DRM-protected songs
Sorry, didn't know. I haven't got any DRM protected music so never come across any limitations.
