I have followed the instructions to create an MP3 file but when I click on a music file and follow the "convert" option, all options on the drop down menu are unavailable (faded out). Am I missing something?

You cannot convert DRM laden tracks from the Apple Music subscription service. You should be able to convert locally stored unprotected media in other formats. Purchases since 2009 are normally unprotected, but if have an Apple Music subscription then they could potentially be downloaded in DRM lossless versions that you cannot convert either. Changing your lossless settings should allow to redownload in 256K unprotected AAC.
