The language for my Mac Books app is set to Mandarin Chinese for some reason, which is different from my default language. I have gone in to check the default language for the Books app and set it to English (UK), but the language for the Books app still isn't changing.
Any guidance would be greatly appreciated.

Very strange! In system settings > general > language & region > preferred languages, if you have more than English UK on the list, try removing all the others and restarting.
Another possibility would be to switch from English UK to English US and see if any difference.
