how to extend wait time before "put hard disks to sleep when possible" puts HDs to sleep?
is the following safe to do from terminal: (i don't like using termial. too many ways for me to make a mistake. I prefer an app to adjust the time.)

The operating system does not give you any control over this setting than what it says. I leave this unchecked in my 2021 MacBook Pro M1 Pro as I find it irrelevant and without impact on my long battery life.
The Terminal pmset(1) command is something else I never use… principally because I only use SSD with my Macs whether internal or external, and there is no need to change spin down time. If you are not comfortable in the Terminal, then UNIX land may not be for you…
