Trying to make highlight color on my Mac Mini darker.

I am not able to make adjustments on my Mac in Highlight Color dropdown menu. The color option are light in color and I would like to have them dark. I chose OTHER in the menu drop down and the full color picker does not show more color picker.

Microsoft's applications (e.g. Office 2021 for Mac, Word, Excel v16.95) are designed to use the Appearance Highlight color set in System Settings > Appearance panel. However, one can further personalize MS Word from the Preference > General panel:

Excel v16.95 does not have this degree of personalization on its Preferences > General panel.

I find that with the selection I have above, the Highlight is more readily seen than with a white document page.

Here, I have the Appearance Highlight color set to Other and chose a green color from the color picker, though I usually use Blue.

Thank you. Do you know what I can do to allow me to see the portion I high light so I will be able to do things like copy, delete etc. Every time I am in like word or excel, I try and copy what I need to work with and it is difficult for me. I spend to much time dragging to high light. I have to do this at least 5 times to make sure I do the area I want to adjust.
