This is the app that downloaded when I downloaded Apple Music app. I only have Itunes Match. I read that both Match and Apple Music apps should look similar except for the apple's music catalog. Why does my app look different than what I saw on youtube? Their app looked more like the itunes app.

There is no such thing as an "iTunes Match" app. Its either the iTunes application itself or the Apple Music App.
Why yours is different its hard to say since we have no idea what you saw on YouTube.
You may have seen someone use the iTunes application, instead of the new Apple Music app for Windows, in which case, yes, the iTunes application is slightly different to the Apple Music App. The Apple Music app is Apple's newer app intended to eventually replace the iTunes application on Windows.
If you want the iTunes Application, then download the iTunes application instead of the Apple Music app.

Make sure you completely uninstall the Music App, before installing iTunes, to get its full functionality. As Having Apple Music app installed neuters the iTunes application's features.
That's a video from 2 years ago. Things may have changed since then.
With that said, I don't see any major difference other than the one in the video is in dark mode which responds to the Windows Theme settings rather than the app itself.
