It's funny because Apple says that Apple Intelligence is available in Ireland on their official website Apple Intelligence Ireland but seems like we are forgotten. I just called the support and nobody knows what is happening they say that we must have a compatible device, they are lost!

Which Ireland? The Republic of Ireland which is part of the EU? Or Northern Ireland which is part of the UK? If you're in the Republic of Ireland, you can get Apple Intelligence on your Mac but not your iPhone or iPad. You also need to have the correct language selected.
