How can I restore deleted Notes on my iPad?

I must have accidently deleted a page in Notes, it had over 5 meetings worth of information. Today it's 2/11/2025 and I have a 02/04/2025 back up which I'm willing to use. I've tried to use this back up but every time the iPad load the missing page, it will immediately automatically write over the old backup with the latest. Turning off Notes synch will delete all the files associated with Notes, so there are no data.

Co-Pilot suggests turning off the WiFi, which I will try and then save all of the information some other way.

Are there any other ways to get around this problem?
