Will Apple let the UK government spy on US citizen's Apple accounts? If they bend the knee to this, I want to know so I can cancel all my Apple subscriptions and move to another mobile device and service.

You will know. The FBI tried that as well in the US and it did not work out well for them. The EU probably already has access to other mobile devices, so not sure switching would resolve that problem. Apple has been the only company that has taken a stance on protecting their users information and that is why it makes the news.
