“Music app not working after Sequoia 15.3 update on iMac:”

I. Using a Hardware Connection:
Q1. “I live in a tiny rural town and my nearest Apple Store is several hours drive away. The iMac is another room from the modem. I could unplug it all and carry it over to the modem and try connecting direct but not today.[…]”
A1. Pain and annoying though it may seem, trying this hardwired seems a great route to take in troubleshoots get this. I’d give it a go. You may want to see about doing the same.
II. Back Up your Mac:
Q2. “I'm scared to try to sync my phone to it for fear that it will erase all the music on my phone.”
A2. If this is locally stored, then nothing would be lost in this case. Back up your Mac to an external drive(IOW: create a Time Machine Backup), so that you can have something to restore it from when bug issues and data loss occurs.
III. Always Have an Adapter to Use:
Q3. “Most of my music is from CD's (old school). I do have an external CD drive but it's USB and my laptop only has USC's. So I might have to purchase that adapter, which is super annoying, and just start over from scratch.”
A3. Annoying though it may be, an adapter is something you should always have for issues like reading devices and recovering files. The Adapter to Use: USB-C to USB Adapter - Apple. Or, you can use this adapter, so that you don’t lose a ISB-C connection (such as for the power adapter): USB-C Digital AV Multiport Adapter - Apple
IV. Troubleshooting Apple Devices:
Q4. ”Thanks for trying. Whilst I have used Apple for over 15 years, sometimes I really hate it.”
A4. You are welcome. I’d assume you know much about this, having used Mac for quite some time. The way I’ve learned about troubleshooting Apple devices is by taking part in these forums, and having such service of my own. As of this reply, I don’t take much part in Apple Watch posts, as I don’t have one my own. So, take part in forums, and you just might learn quite a bit (and save a load of money, by avoiding taking a class on troubleshooting and learning about Apple devices).
All the best!
