I've just purchased an iPad Air but I'm not receiving any free trials for Apple TV, arcade or music
Why? Do I need to do something specific?

Did you buy the iPad from Apple or an authorized Apple dealer? If not, then the iPad would be considered to be "used" and so not eligible. If you did buy from an authorized source, were you already subscribed to those services? The three-month trial only applies to new subscribers or in some cases to those who had a lapsed subscription.
If you should be eligible, it's been a while since I registered a new device but if memory serves, the offers appear in the Settings app, at the top just under your Apple ID.

The same suggestion for redeeming and terms would apply to Apple TV and Apple Arcade, with the relevant apps, of course.
