Spam Email account named "Senior Discounts" showed up on iPad mini

Glad that got it sorted. Just for future reference, it was almost certainly not a virus. The most likely way this happened was you or someone clicking, either inadvertently or by being tricked into it, a link that enticed the installation of that profile. Be very, very wary of accepting any installations of any sort unless you're completely sure that the site you're accessing is safe.

Try this: go to Settings -> General -> Profiles & Device Management (or VPN & Device management, depending on the version of iPadOS your device is running). If you see a profile there and you're not a part of a company or school who is managing your iPad, delete that profile and restart your iPad. Then see if you can delete that spam email account.

If you remain unable to remove the account, check your ScreenTime Restrictions allows changes to Accounts:

Settings > ScreenTime > Content & Privacy Restrictions > [Allow Changes To] Accounts - set to Allow

Try deleting the offending spam account from Calendar:

Settings > Apps > Calendar >Calendar Accounts > [spam account] > Delete Account
