iPhone 12 Pro running iOS 18.2.1: under Settings > Apps > Messages > Send & Receive, there is a phone number and 2 email addresses listed, but I can't change any of them. I can only check/uncheck them. I would like to change one of the email addresses, since it is now obsolete. How do I do this? (This issue is also on my iPad Pro).

You could update your Message sender's addresses in your Apple account.
If the email address you want to change is the primary one ie: in use as your Apple ID:

Else: For changing Apple Account details: One way is to Log-in to your account online: https://appleid.apple.com
You may need to allow 24 ours for the change to update everywhere it is in use (including Messages).
Else: Restarting your device(s) may help.
