When I woke up this morning after going to sleep while streaming shows, I come back to my iPhone and the first main desktop looks normal but the following four desktops have disappeared with all my organized folders, etc.!

Finding Disappeared Fils:
Are you referring to the Files app? Go to the iCloud Drive, and see if they exist in there: https://www.icloud.com/iclouddrive
Troubleshooting Lost Home Screen Apps:
Two methods...
A. Drag it Back:
Swipe your finger in from the right. Then, drag it back over.
No Success?...
B. Reset the Home Screen Layout:
If a widget or app has gone mossing somehow, then you need to reset the Home Screen Layout...
Go Here: Move and organize apps on iPhone - Apple Support. You'd have to add back all the widgets that you can recall being back on there; so, take a screenshot of each Home Screen, so you can add apps back to where there should be.
