In January, I plan to fly with my family to Thailand on vacation. And I want to buy Apple equipment there.
Can I get a student discount if my nephew is a student, and I am a teacher with education (Ukraine), but I am not officially employed at the moment.
And if I go to an Apple store and buy from it, can I get a VAT Refund?

You need to ask Apple but the nearest Apple sub-office appears to be in Turkey, although this one in Ireland usually pops up for most countries around in your area:

The US policy for educational purchases is that the buyer must be enrolled in or employed by a US institution and have documentation to that effect. So you may find any Apple edu program to be country-specific.
