Apple will never send a message like this.....because they do not get involved with lost or stolen phones.
The "weird" message is a scam that is trying to trick you into tapping on a link to provide your Apple ID and Password to the criminals who have your phone.....so they can get into your phone and then erase and sell it.
Do NOT respond to the message. Ignore and delete the message. Ignore and delete any other messages like this.
That is a scam message probably from the criminals that stole your iPhone, do not interact with the message. They are most likely trying to get you to remove your iPhone from Find My so they can use and set your iPhone.
It indicates that the criminals removed and “read” your SIM before you cancelled it with your carrier.
Unfortunately, they now literally “have your number” and you’ll probably receive more of these — in various “flavors” from other bad actors — for quite some time.
It’s all part of the same targeting phishing strategy intended to cause you anxiety and prompt you to provide them with your phone and AppleID credentials.
Continue to ignore and delete them.
SPAM! Ignore it, delete it. No one especially Apple will send you a message about your stolen phone. You can tell from the URL in the link that it is not coming from Apple.
