Pages Document Issue

I am stumped. I have some Pages documents that when I go to change the text color background it has one set of colors available and other documents that when I go to change the text color background it has a different almost pastel set of colors. I'm pretty sure the difference is because I've got some documents that I keep opening up an old document, duplicate it and create my new document using the formatting already set up in that old document. It's the new docs that I can't seem to get the text color background to work on.

Anyone have any ideas why or how I can get the old text color background on new docs?
