My AirPods will connect to my phone but will not work with my Apple Watch Ultra. But if I go and delete the AirPods from my phones Bluetooth settings then pair them directly with the watch they work on the watch but then will not work on my phone.

My AirPods work fine on both. Do you have the Apple Watch app on your iPhone? If you don't, perhaps that's the problem. Having the Watch app on your phone allows you to do things on your watch using the Watch app with the larger type on the iPhone keyboard.
Yes I do have the Apple Watch app. I’ve paired it with both but whichever I pair it with last will work then when I go back to the other I have to delete it from Bluetooth and re pair:
