I am holding off on updating my watch 9 to 10.4 because I am not sure if I can still use it for Apple Pay by double clicking the side button after update. Has anybody used this yet and can describe how it works?

Please unpair the two devices, force restart both devices and then pair both devices again. The Apple Support article I linked below explains the steps.

Then the update doesn’t affect you.

Apple Pay no longer works on 10.4 for me. I’ve gone through the settings on both the watch app on my phone as well as on the watch and cannot figure out how to reenable Apple Pay. Any help would be great. Thank you.

How are you using Apple Pay on your Watch now?
By double clicking side button to bring up wallet app to pay with Tap to pay
It still works the exact same way. No issues. Single click Side Button and it brings up Control Center and Double Click brings up Apple Wallet and displays default payment method.
Are you using AssistiveTouch under Accessibility?
No not using Assistive Touch that I know of
