Apple Watch Series 7 stuck on “Preparing” during update
iphone on iOS 17.3. Watch on previous watchOS version trying to update to 10.3. Stuck on “Preparing” overnight (8+ hours).

I had the same issue - so I "reset" the apple watch - which wiped it clean then did it all over again
set up the watch from new, paired it, downloaded the upgrade, installed it and FINALLY it works with the latest software!
