Ok. Before I do that, will deleting the app delete all of my history of conversations and such?
I don't think so, as I believe those can still be accessed with your Facebook account online.

Assuming you're talking about Facebook Messenger from Meta, you may not have given it permission to. Open Settings > Messenger and change the setting for 'Photos' under 'Allow Messenger To Access'.
If you're still having trouble, you may wish to contact Meta for help with their product - Messenger Help Center - Meta Support

When I open Messenger in my iPhone settings, and go to Photos, there is no option to allow full access. Only "None" or "add photos only". When I try to attach a photo in messenger, it tells me I have to go to my settings, even though "add photos only" is selected.
Try deleting and reinstalling the app to see if it prompts you to allow photo access again.
I’ve had the same problem. There was no option to allow access to photos and camera in the settings but I can see in my ipad that it has the option. So I just restarted the phone and it was fixed.
