my 2016 mcbk pro w/ Catalina 10.15.7 says "a software update is required" to connect to a just-out-of-the-box ipad pro 12.9 5thgen. I thought Catalina was sufficient? Thanks for advice.

Catalina is sufficient. The update is a small driver / firmware update. It is not macOS version update.
