Looking at buying a cellular Apple Watch but unfortunately giffgaff is not on the list that supports it,

GiffGaff is a community run MVNO and getting hold of anyone senior will be problematic outside the community forum.
It was news to me that they now offer eSIM at all, as members have been asking for it for years. It should boost their business model to charge around £7 or £8 a month extra on the Watch plan for no extra traffic but it really is a niche market over here.

but I suspect whatever apple supporter you can get hold of would likely know less than GiffGaff

GiffGaff is an MVNO, which means they buy cellular services from a major carrier (I think it is O2).
GiffGaff would need to renegotiate their service contract to support the Apple Watch. Chances are the major carrier would want more money.
As GiffGaff gets its customers based on its low prices, that would hurt their business model.
You will need to ask a GiffGaff senior company official if they intend to support the Apple Watch.
NOTE: it is possible for an MVNO to support the Apple Watch, as Xfinity and Spectrum in the U.S. are MVNOs that support the Apple Watch. But they are also cable companies with other revenue streams (TV, broadband ISPs, etc…) to offset any revenue losses from a higher MVNO contract with their major carrier.
When GiffGaff supply eSIMs then there is a chance that they may be able to support watches after that.
