I have a Iphone 8 Plus - IOS 16.7.2
Which apple watch should I buy to be compatible? Is it compatible with series 8 or series 7?

You should be able to buy any watch except a series 9 (or newer Ultra) provided the watch is not running watchOS 10.
Apple Watch Series 8, and Apple Watch SE require an iPhone 8 or later with iOS 16 or later. A series 7 watch should work as well with the above proviso.
