I updated my iPhone 14 Pro Max to iOS 17.1 and since then (several days now) the Apple Health App is stuck downloading my info from iCloud.
I use Apple Health to help run a medical device so this is vitally important to fix.
Any ideas??
I have force closed the app multiple times and I have restarted my phone as well. Nothing has worked.

Yeah, I ended up calling them too, and they tried the same thing for me with no help. I hope they get this fixed though because I use Apple Health as part of a medical device (I'm Type 1 Diabetic, and it is crucial in running my insulin pump correctly) and without it, I am not able to use all features needed.
Same problem, I called apple today and they don't have any solution. You can go to settings>apple id>icloud>apps using icloud>show all>health app>turn off sync this iphone and turn it back on.
