As mentioned, your device is not compatible with a higher iOS. Also, the latest iOS is 17.0.3. If you want the newest iOS you will need to upgrade to an eligible iPhone which would be XR or newer.

An iPhone 8 or iPhone X isn't capable of 17 or above; they require an A12 or better CPU.

You can try to trade it in for a newer model through your internet carrier, or through Apple.
