If your goal is to track your cat, you should consider getting a GPS-based tracker that are designed to be used with pets. The reason is that the Apple AirTag relies on using Bluetooth, not GPS. It also relies on having an iPhone (any iPhone) within Bluetooth range, around 30', to pick up the tag's Bluetooth signal. In turn, that phone needs to be connected to the Internet, to then, relay that signal to the Apple servers. This is where you would use the Find My app on your iPhone to "see" where your cat is located.
I have turned off “Notify when left behind” setting in the Find My app as I will be coming and going from home to go to work etc, and don’t want that notification.
That would take care of you not getting the notifications, but other iPhones nearby would still "see" your AirTag.
Will that AirTag beep if the cat is left at home for an extended period and separated from my iPhone?
Yes, it would. The AirTag is designed to start beeping when it is separated from its "host" iPhone, typically starting around 6 hrs after separation. Think of this as sort of "separation anxiety." For some animals this can be quite annoying, especially those where their owners have employed "training" collars with their pets.
The key here is that the AirTag was basically designed to help you find a misplaced item. It is not designed for tracking, whether that be for people or pets.
