I bought I device that is supervised. Does that mean they can view and steal my data

So I bought a used device and it looks like it supervised. They guy said it saved from ewaste. I understand the purpose of supervision and restricting devices but this one does not appear to be heavily restricted so far. I went to settings>general> and then there is not even an option for "Profiles & Devices." I also tested a website that should be restricted and it worked fine.

I want to test downloading apps etc but I am hesitant to sign in with my apple id. I know supervision can restrict access, but does it allow allow a 3rd party to view all of my stuff, websites I view, keystrokes, etc? That is what I am really worried about. Or is this a thing where if the supervision is not intrusive, it just shouldn't really matter to me? I'm trying to figure out if I should make a big fuss about this purchase or not. Thanks for any insight!

When supervised or externally managed, you should assume that you have absolutely no privacy.

The presence of a management supervision indicates that the device is centrally managed by an Enterprise or Educational establishment. Devices that are supervised/configuration locked by an MDM platform can usually only be released from central management by the platform that manages the device. Be aware that Apple will not assist with removal of management profiles.

Unless you are lucky - and have the option to delete the profile from iPad Settings - you’ll need to seek assistance directly from the System Administrator who manages the device.
