If I select a show in my Up Next list on Apple TV+, it starts playing the next episode, but often that’s not what I want to do. I just want to see how many episodes there are or how long they are. The only way I’ve found to do it is to ignore the Up Next list and instead do a search for the show. So annoying, and different from every other streaming service.

I tried that suggestion but when I click and hold the only options are to share, mark as watched or remove from my list. Super annoying that I can't get to details from there, or anywhere, easily.
I no longer have Up Next.

There is a built-in shortcut, accessible through the Up Next list. Try click-and-hold [show] on a tile in the Up Next list, then choose Details from the contextual pop-up menu.
On iPad with iPadOS 16.6, in the TV app, you can use the (⋯) More button to access a contextual menu, for content listed in the Up Next row. Then choose View Details.
You forgot to mention on what device/model/OS this is happening for you.
I am using an Ipad.
I updated to 16.6 but now no longer have Up Next.
Go to show details instead of playing next episode
