Why does Siri try to play music from Apple Music when I have no subscription?

So, mind blown further.

I decided to delete all of the music from the iPhone and start over. First, I plugged the iPhone into the Mac, allowed to backup, then unchecked "Sync Music onto xxx's iPhone". Got a pop-up saying all music would be deleted, which is what I wanted anyway. When that finished, checked the phone and all music was still there. Hmmm. So I went into Settings>General>iPhone Storage and deleted the music that way. It was all gone, just like I wanted.

Next, I wanted to re-sync the music, so plugged it back into the Mac. Went back to the "Music" tab on the sync settings, and lo and behold "Sync Music onto xxx's iPhone" was checked again. What the heck? So I unchecked it and let the backup step complete. When THAT finished, "Sync Music onto xxx's iPhone" rechecked itself, and the music started sync'ing back to the phone. OK, what I wanted to happen anyway, but would want to think I have SOME control over this.

AND, after re-syncing the music, putting iPhone in airplane mode, I go back to "Hey Siri, play Bohemian Rhapsody" which is AGAIN on my phone. Siri responds "I'm sorry, I'm having trouble with that connection".

Any ideas?
