Sky Soft Video Converter doesn't open on my MacBook Pro

FWIW, the app hasn't been updated in 3 years, iSkysoft abandoned the app. So it makes sense it doesn't work on your new Mac.

if you just need a video converter then the free app called handbrake is pretty good
