I block most of the spam email addresses I constantly receive, but some I can't. The option to block doesn't work with some of the addresses. This has been only happening lately. Any idea why? What can I do about it?

It's not always possible. You have to look at the senders address or subject lines and look for consistent strings of text they use. If there aren't any, then it makes it much more difficult to stop them. One thing to keep in mind, is do not click on emails that you don't recognize. Many emails these days contain a special pixel that lets them know if you have opened the email, which then notifies them you are a real person.
